The Horseradish Capital of the World Is Across the River

Collinsville, Illinois, just across the river

The bottomland along the Mississippi around Collinsville, Illinois has the soil horseradish likes, and festival organizers say most of the world's crop comes out of those fields. That is why the town calls itself the Horseradish Capital of the World. It sits just across the river from us here in St. Charles.

Every June the town throws the International Horseradish Festival, and for years now we have had a table there with the jars open and pretzels ready. Public radio came through to cover the festival in 2018 and Charlie is in the pictures with the mustard in front of him. You can read that one here.

That is most of how this works. Stand behind the table, hand somebody a pretzel with a little mustard on it, and let them decide for themselves.

What Is in the Jar

Sweet base, mild to medium heat

9oz jar of Grandpa Spencer's horseradish flavored mustard

This is a gourmet horseradish mustard with a sweet base. The heat is mild to medium and it won't wipe out your sinuses, which surprises people who expect horseradish to be a dare.

It is our best seller by a good margin. We added it in October of 2014, and the recipe underneath it is my Grandmother Adora Spencer's sweet and spicy mustard from 1935. My grandfather loved it enough that we named the business after him, but Adora should really be getting all the credit.

What to Put It On

Start here and go from there

Excellent on sliced meat sandwiches and on anything you can cook on the smoker or the grill. Brats, burgers, hot dogs. Stir a spoonful into potato salad or deviled eggs.

You can thin it with wine, vinegar or any juice of your choice and use it as a marinade. Let your imagination go crazy.
